Flavor and Texture: Velvet Pioppino (Agrocybe Aegerita) also known as Pioppini or Black Poplar mushroom is a meaty and firm textured mushroom. The slightly sweet, peppery, nutty, and earthy flavor make it desirable for any culinary experience. The long stem holds its texture and keeps an asparagus-like crunch. This mushroom holds up well in pastas, stews and soups, hot pots, and sautéed on the side.

We recommend storing your mushrooms in the packaging they come in or transferring them to a paper bag. We do NOT recommend placing them in the crisper as this will speed up the aging process. Mushrooms need air flow, and our packaging provides that to help the shelf life and the freshness of the mushrooms. If your mushrooms dry out a little in the packaging, we like to suggest using them in soups or broths to get full use out of them.
