Flavor and Texture: Golden Enoki mushrooms (Flammulina velutipes) go by many different names, golden needle mushroom, velvet shank, enokitake, but whatever you call them, they’re sure to please. Enoki has long, thin, edible stems and small caps that bubble inward. Their flavor is mildly earthy and fresh, but they absorb and meld with surrounding flavors easily. When boiled with salt, the broth can be likened to a mild chicken broth. Enoki texture and mouthfeel are truly a unique experience. Their long slender stems are reminiscent of noodles but with a satisfying crunch. Our Golden Enoki mushrooms can be cooked in a variety of ways, but since they were popularized in Japan, you can find tons of Japanese recipes, from pan sautés with garlic and scallions, nametake, a simple rice dish with soy sauced enoki, to traditional ramen noodle bowls— the Golden Enoki is a delicious recipe staple with nutritional value and a delectable crunch.

Golden Enoki mushroom can be stored in the main compartment of your refrigerator, in paper wrapping, or paper bag. This prevents excess moisture from being absorbed by your enoki. Make sure your mushrooms are loosely wrapped, allowing for airflow. Our fresh, Golden Enoki mushrooms can be stored for roughly 5-7 days under these recommendations.
