Flavor and Texture: Pearl Oysters (Pleurotus ostreatus) are a thicker, more meaty oyster with a mildly sweet flavor with woodsy notes that pull through. This meaty mushroom holds up well in stir-fries, pizza toppings, and in pastas. The large seashell-like cap holds up especially well on the grill. Any of the oysters will help add that savory note to any dish.
Benefits: Oyster mushrooms contain high amounts of protein which make them a great meat alternative. They also contain B vitamins, vitamin D, as well as amino acids. Oyster mushrooms also have the ability to help lower the lipid profile.

We recommend storing your mushrooms in the packaging they come in or transferring them to a paper bag. We do NOT recommend placing them in the crisper as this will speed up the aging process. Mushrooms need air flow, and our packaging provides that to help the shelf life and the freshness of the mushrooms. If your mushrooms dry out a little in the packaging, we like to suggest using them in soups or broths to get full use out of them. They should last around 5 or so days stored under these recommendations.
