Flavor and Texture: Maitake (Grifola Frondosa) also known as "Hen of the Woods" is quickly becoming one of our favorite mushrooms. The rich woodsy flavor mixed with the peppery notes make it a savory blend of deliciousness. The succulent texture cooks well with many different dishes. Some of the ways we have cooked them is in stir-fries, soups, and folded into eggs in the morning. While this mushroom takes a little longer to cultivate, the flavor and texture are well worth the wait.
Benefits: Maitake mushrooms contain many health benefits. They contain potassium, fiber, beta-glucans, and antioxidants. It also contains vitamins B and C. Which make it a great addition to help overall immunity. There are also studies showing the anti-inflammatory and immunomodulatory effects of the mushroom.

We recommend storing your mushrooms in the packaging they come in or transferring them to a paper bag. We do NOT recommend placing them in the crisper as this will speed up the aging process. Mushrooms need air flow, and our packaging provides that to help the shelf life and the freshness of the mushrooms. If your mushrooms dry out a little in the packaging, we like to suggest using them in soups or broths to get full use out of them.
