Flavor and Texture: Chestnut mushrooms (Pholiota adiposa) are not solely named for their lovely coloration, but their taste as well. Chestnuts offer an earthy, nutty, buttery flavor and meaty, crunchy texture. They are incredibly versatile, but their sturdiness makes them a scrumptious addition to soups, stews—anything you prepare low and slow, as their flavor and texture hold beautifully when slow-cooked. Both the caps and stems can be eaten, but we recommend breaking or slicing the bottom ½ inch or so off the bottom of the stem because the tips can become bitter and chewy— kind of how you would chop asparagus ends. Before adding them to your favorite recipe, clean away any dirt or debris with a dry brush vs. rinsing them with water.

Chestnut mushrooms are a sturdier variety and can be kept in the main compartment of your refrigerator. We recommend storing your Chestnuts in paper wrapping or a paper bag so excess moisture can easily be absorbed by the bag, rather than by your delicious mushrooms. Our fresh Chestnut mushrooms can be stored for roughly 5-10 days under these recommendations.
